Karatzova peppers for our Smoked Chili Flakes come from a few families in northern Almopia. These mildly spicy peppers are hand-sorted, then slow-smoked over birch wood for 10 days with care to keep the fire burning. Finally, they are hand-crushed to create the traditional Greek spice blend called Bukovo.
